Technology of 3D food printing from grown cells developed by Russian scientists

Russian scientists have developed new approaches to 3D printing of food using plant cells, RIA Novosti reports

The method was developed by a scientist from the Vyatka State University and published in the Gels journal. According to him, thanks to the use of grown plant cells, it is possible to make food with previously set parameters as a constructor.

"New possibilities of 3D food printing are extremely topical for people with special nutritional needs. These are the elderly or patients who have a difficulty with eating or swallowing, children, as well as people with various metabolic and inflammatory disorders," experts report.

It is also noted that the new technology is easy to operate, makes it possible to arrange mass production, while creating economic and environmental benefits by reducing food waste and financial costs for food storage and transportation.

The development may become one of the ways to control eating behaviour, since the technology makes it possible to create products according to certain and specified parameters. "The food obtained using our food 3D printing method has been tested and is fully suitable for nutrition. We have selected the optimal printing temperature and speed, layer thickness and other process parameters," the Vyatka State University’s Vice-Rector for Science and Innovation commented.
